As Promised...more recipes!Last week or maybe even the week before, I was talking about getting ambitious and making blueberry pancakes. I made them, but we had them for supper. Here's the recipe. It makes a good size batch, but I like them cold with a little sugar sprinkled on them.
~Blueberry Buttermilk Pancakes~
2 eggs (slightly beaten) Blueberries if in season
In a bowl lightly beat eggs, then combine in melted butter and lastly stir in the milk. Set aside.
In another bowl add all dry ingredients and then combine with the liquid ingredients. Fold gently. Add berries. Spoon out 3-4" pancakes onto a 400 degree griddle. Flip when many bubbles appear. Total cooking time should only be about 4-5 minutes. With the leftover buttermilk, I made this coleslaw recipe from my Cooks Country magazine. I adjusted the mayo and sour cream to be a little lower in calories. It was really good and really easy. I'm making it again tonight.
~Creamy Buttermilk Coleslaw~ 1 16-ounce package Coleslaw Mix 3/4-cup buttermilk 1/2-cup mayonnaise 1/4-cup sour cream 2-tablespoons sugar 1 teaspoon Dijon mustard 1/2-teaspoon salt 1/8 teaspoon black pepper
Mix all together 1-2 hours before serving. Note: I used lo-fat mayo and fat free sour cream and it turned out great. 评论 (9)
