Twix Bars & My BirthdayJim always makes my birthday special and this year was no exception. We had a great weekend up north and even having to share my birthday with Molly, we all had a good time. Especially Molly! (We counted and she got to swim in 10 different places). Only thing that went wrong was my pick for lunch on our way home on Sunday. I wanted to stop at the Norske Nook in Osseo so I could get a piece of Sour Cream Raisin pie. Well, the place was packed and there were all kinds of people waiting for a table. We headed down the highway and stopped at the Pizza Hut in Black River Falls. I get a birthday raincheck on that lunch spot.
I'm a Food Network junkie. I don't, but I could watch it all day. When nothing else is on TV, even Jim will check to see what Rachel or Emeril is cooking. So, on that line of thinking, I present my birthday presents from Jim and Molly.

If you remember last month when we had that disastrous pot luck at work and I told them I didn't want one for my birthday...well, it took some convincing, but instead of a potluck, they chipped in and got me a gift card for Wal-mart. I didn't want anything, but they kept everything very low-keyed and are looking forward to the treat I promised to bring in tomorrow. This is a perfect one to make on a hot day. It doesn't need to bake. Takes a few minutes of cooking on the stove top, but nothing like baking a cake for an hour.
Twix Bars
16 oz. box Waverly or Club crackers
1 stick butter 1/2-cup milk 1-cup brown sugar 1/3 cup white sugar 2 cups graham cracker crumbs (1 package) 1/2-cup peanut butter (or less) 1 1/2 cups chocolate chips (or combination of chocolate & butterscotch) Layer the bottom of a 9 x 13 inch pan with a layer of crackers. In a saucepan, melt the butter; add milk, sugar, brown sugar and graham cracker crumbs. Bring to a boil; boil for 5 minutes, stirring constantly. Spread half of this mixture over crackers, top with another layer of the crackers, then remainder of caramel mixture and another layer of crackers on top. Melt chips with peanut butter. Stir until smooth: spread over top. Chill until firm and cut into squares.
